This week's recipe is a fun take on traditional waffles. We have chosen to create this recipe using a selection of tropical fruits, however, feel free to swap these out for some fruits of your choice.
We have served this beautiful dish on our best-seller, the ocean medium paddle. This piece is always a show stopper and we couldn’t imagine a better dish to show it off on.
INGREDIENTS
Waffles:
Cooking Spray
2 cups all-purpose flour
1 tbsp white sugar
4 tsp baking powder
2 eggs
1 tsp vanilla extract
½ cup butter, melted
1 ¾ cups milk of choice
Meyer Lemon Cream:
1 cup whipping cream
2 tbsp white sugar
2 tsp meyer lemon juice
1 tsp lemon zest
Toppings:
Dragon fruit, diced
Kiwis, peeled, sliced and halved
Lemon zest
Fresh mint
Maple syrup
METHOD
Heat up waffle iron and spray with cooking oil. In a large bowl, whisk flour, sugar and baking powder together. In another bowl, beat eggs until light and fluffy. Add in vanilla extract to eggs and beat again. Add egg mixture into flour mixture and combine. Add butter and milk and stir until smooth. Add ¼ cupful’s of batter into waffle iron and cook until golden brown. Set aside and continue the rest.
In a stand mixer with a whisk attachment add whipping cream, sugar, lemon juice and lemon zest. Beat on high until stiff peaks form. Refrigerated until ready to use.
Once waffles are ready, add a dollop of meyer lemon cream and top with dragon fruit and sliced kiwis. Top with lemon zest and maple syrup and enjoy!
